It is really easy to make and although, like all bread, there is rising time, it is only half anhour. There are really not many ingredients apart from lots of herbs, so it's a goodrecipe to make spontaneously if your not bothered to go shopping and tend to hoardthings like flour in your house. Light Carrot Cake
I had an idea that carrots cakes were always very heavy until I came across this great recipe from Rasberri Cupcakes! This cake is really light with less nuts that most carrot cakes. Although the cake is light the icing is quite rich, I think this balences out the cake, but you may find it to rich. If this is the case I suggest you simply put less icing on because I have found that other icing doesn't go so well with this cake. RECIPE:
